Homemade Chicken Patties Recipe


INGREDIENTS:

  • 2 lbs boneless skinless chicken breasts, cut into 1" pieces
  • 1 large egg
  • 1 Tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp chili powder
  • 2 Tbsp dried parsley
  • 1 tsp salt
  • ¼ tsp pepper
  • 1¾ cups plain breadcrumbs

INSTRUCTIONS:

  1. Preheat oven to 375 and spray a large baking sheet with cooking spray.
  2. Add the chicken, egg, olive oil and spices into the bowl of a food processor fitted with a steel blade. Pulse in short bursts until the chicken is finely minced but not so much that it becomes a paste—a few pea-sized pieces of chicken here and there will be just fine.
  3. Scrape down the sides of the bowl and stir the mixture to make certain all of the ingredients have completely combined. Measure half a cup of the mixture, roll it into a ball then coat with breadcrumbs. Transfer it to the baking sheet and press into a patty approximately ½" thick. Repeat with remaining chicken mixture.
  4. Spritz the tops of the patties with cooking spray and bake 18–20 minutes, or until the patties have cooked all the way through and reached an internal temperature of 160 degrees.
  5. Remove from oven and serve as a main course or in a sandwich. Any leftovers will freeze and reheat well.
