INGREDIENTS:
- 5 -6 pieces chicken thighs, deboned
- salt and peper
- 3 cloves garlic, minced
- chopped cilantro, for garnish
- cooking oil, for frying the chicken
- 2 -3 tbsp butter
SOY MUSTARD SAUCE
- 1 tbsp. soy sauce
- 2 tbsp. tomato ketchup
- 1 tbsp. mustard ( you can use the flavoured ones if you prefer)
INSTRUCTIONS:
- To debone the chicken thighs, use a scissor to cut around the bones of the chicken, cutting as close to the bone as possible. Heat up a frying pan with cooking oil. Combine the sauce ingredients in a small bowl. Fry the chicken thighs with the skin side up until nicely seared and repeat on the skin side, Do this in batches because you will not get a good seared color when the chicken is too crowded in the pan. Remove chicken to a plate and set aside.
- Heat up butter in another pan. Saute the garlic until soft. Add in the sauce and the chicken with all its juices into the pan. Cook for 5-7 more minutes or until chicken is cooked through. Garnish chicken with chopped cilantro.
