 Halo-halo in Ube Leche Flan

INGREDIENTS:

  • Egg Yolk, 10 medium size
  • Condensed Milk, 1 can
  • Sugar, ½ cup
  • Evaporated Milk, 1 tall can
  • Ferna Vanilla Liquid, 1 tsp
  • Ferna Ube Flavocol, 1tbsp
  • Bottled Mung Beans, ½ cup
  • Bottled Yellow Beans, ½ cup
  • Sweetened Macapuno, ½ cup
  • Green Kaong, ½ cup
  • Red Nata de Coco, ½ cup
  • White Sugar, 2 cups

INSTRUCTIONS:

1. Whisk together egg yolk, condensed milk, sugar, evaporated milk, vanilla and ube flavocol.
2. Let it rest for 15 minutes, covered with cling wrap.
3. Caramelized sugar in a heavy saucepan.
4. Pour enough caramel in a ramekins.
5. Arrange sweetened ingredients in the ramekins in no particular order.
6. Pour milk-egg mixture.
7. Bake for 15 minutes in baine marie or hot water bath.
8. Cool completely then chill.
