Mango Chutney Drumsticks Recipe


INGREDIENTS:

  • 8 chicken drumsticks
  • grated rind and juice of 1 lime
  • 1 tbsp. crushed garlic
  • 1/4 c. light soy sauce
  • 1 tsp. salt
  • 1/2 tsp. ground black pepper
  • 1 tbsp. paprika powder
  • 2 tbsps. oil
  • 1/2 c. mango chutney (choose one with small bits or chop up the bits)
  • 3 tbsps. melted butter
  • 1 tbsp. crispy fried shallots or onions

INSTRUCTIONS:

  1. Put the chicken drumsticks in saucepan and marinate in a mixture of the next 6 ingredients. Leave aside for half an hour.
  2. Pre-heat the oven to 180° C/350° F.
  3. Heat up the chicken mixture in the saucepan on low heat for 10 minutes. This step will make the chicken absorb the seasonings as it seals up. Make sure that the heat is very gentle so that the chicken stays tender when cooked.
  4. Use a non-stick baking tray or line a baking tray with non stick liner. Arrange the chicken in a single layer, making sure that there are spaces between each piece for the hot air to circulate through. 
  5. Drizzle with the cooking oil.
  6. Bake for 30 minutes, turning the pieces over halfway through the cooking time.
  7. Increase the oven temperature to 200° C/400° F
  8. Mix the chutney and melted butter.
  9. Spoon all of this mixture on the chicken pieces. Bake for a further 15 minutes, turning the pieces halfway through the cooking time. Spoon the chutney drippings onto the chicken as it bakes. It's done when the chicken is cooked through and the chutney glaze has caramelized.
  10. Transfer to a serving dish and sprinkle with crispy shallots or onions.
