INGREDIENTS:
FIRST DOUGH
- 1 cup bleached flour
- 2 oz oil
- 2 cups bleached flour
- 4 tbsp sugar
- 4 oz coconut cream
- 2 oz oil
- 1/4 tsp salt
- In small bowl mix first 2 ingredients.
- In medium bowl mix next ingredients.
- Roll second dough into a large 1/8" rectangle. Sprinkle first dough evenly over the second dough. Roll lengthwise and refrigerate for 15 minutes.
- Meanwhile portion out ube into 1 oz pieces. Remove dough from refrigerator. Cut log in half then in small equal pieces. I got about 20 - 1.25 oz.pieces.
- Bake 375 for 20 minutes. Tops will be pale and bottoms will be slightly browned. Brush tops with egg wash. Return hopia to 500 degree oven for 5 minutes to brown tops.
