Loukoumades // Greek Donuts

INGREDIENTS:

  • 2 cups (500 ml) lukewarm water
  • ½ tsp salt
  • 1 tbsp white vinegar
  • ½ tsp sugar
  • 2 teaspoons (7 g) dried yeast
  • 3⅓ cups (500 g) plain flour
  • ½ teaspoon baking powder
  • oil, for deep frying
  • ½ cup (125 ml) honey
  • ½ cup crushed walnuts
  • ½ teaspoon ground cinnamon
INSTRUCTIONS:
  1. Pour lukewarm water into a large bowl and stir in salt, vinegar, sugar and yeast until sugar and yeast dissolve.
  2. Beating constantly slowly add sifted flour and baking powder and beat until a thick batter forms.
  3. Cover bowl and set aside in a warm place for 90 minutes, or until dough doubles in size.
  4. In a large, heavy-based pan, heat oil to 180 degrees Celscius.
  5. Gather the dough in your hand, squeeze to form and ball and scoop off the dough with a spoon. Place in the hot oil and fry until golden.
  6. Remove from oil using a slotted metal spoon and drain on kitchen paper.
  7. Heat honey in a small saucepan over medium heat until it starts frothing. Remove from heat and pour over the cooked loukoumades.
  8. Sprinkle over walnuts, dust with cinnamon and serve with ice cream.
