INGREDIENTS:
- 1/4 cup tomato sauce
- 1 tbs hoisin
- 2 tbs honey
- 1 tbs molasses
- 1 tbs chopped garlic
- 2 tbs superfine sugar
- 1 tsp five-spice
- 2 tsp cornstarch
- 1 lb 10 oz pork fillet
INSTRUCTIONS:
- Combine first 7 ingredients in a saucepan. Combine cornstarch and 1 tablespoon of water and add it to the spice mixture. Bring to a boil, then reduce heat and simmer for 2 minutes. Allow to cool, then place pork in sauce, and then cover and refrigerate for at least 30 minutes.
- Preheat oven to 415 F. Lift the pork out of sauce and place on a wire rack over a baking tray half-filled with hot water; reserve marinade. Cook pork for 15 minutes, then reduce oven temperature to 350 F and cook for a further 15 minutes, basting with reserved marinade. Remove from oven and let rest for 5 minutes before slicing and serving.
