INGREDIENTS:
- 1 cup strong-brewed coffee, cooled
- 1/4 cup molasses
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 2 cloves garlic, crushed
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4 2-inch boneless pork chops
- Combine the marinade ingredients in a small bowl.
- Put the pork into a plastic storage bag, then pour half the marinade over it.
- Store the rest of the marinade in the fridge until you’re ready to make the pork.
- Let the meat marinade for at least four hours, but most of the day if you can.
- Preheat your oven to 400 degrees.
- Put the remaining glaze into a sauce pan and simmer it over medium heat until it thickens, about ten minutes.
- Heat a skillet over medium-high heat with a little bit of olive oil.
- Sear both sides of the pork to create a brown, caramelized crust. Don’t skip this – it seals in moisture. It should only take about three minutes per side.
- Move the seared pork chops to a baking pan, brush them with the reduced glaze and bake them for 10-15 minutes, or until the center reaches 150 degrees.
