Savory Molasses Glazed Pork Chops

INGREDIENTS:

  • 1 cup strong-brewed coffee, cooled
  • 1/4 cup molasses
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 2 cloves garlic, crushed
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 2-inch boneless pork chops
INSTRUCTIONS:
  1. Combine the marinade ingredients in a small bowl.
  2. Put the pork into a plastic storage bag, then pour half the marinade over it.
  3. Store the rest of the marinade in the fridge until you’re ready to make the pork.
  4. Let the meat marinade for at least four hours, but most of the day if you can.
  5. Preheat your oven to 400 degrees.
  6. Put the remaining glaze into a sauce pan and simmer it over medium heat until it thickens, about ten minutes.
  7. Heat a skillet over medium-high heat with a little bit of olive oil.
  8. Sear both sides of the pork to create a brown, caramelized crust. Don’t skip this – it seals in moisture. It should only take about three minutes per side.
  9. Move the seared pork chops to a baking pan, brush them with the reduced glaze and bake them for 10-15 minutes, or until the center reaches 150 degrees.
