INGREDIENTS:
Pork Ribs:
- 1 kilo Pork Ribs
- 4 teaspoons Paprika
- 2 teaspoons Garlic Powder
- 1 teaspoons Ginger Powder
- 1 teaspoons Black Pepper
- 2 teaspoons Salt
- 2 teaspoons Brown Sugar
Filipino-style Barbecue Sauce:
- 1/2 cup Sprite or 7 Up
- 1/2 cup Banana ketchup
- 1/4 cup Soy Sauce
- 1/4 cup Brown Sugar
- 1/4 cup Vodka
Potatoes Wedges:
- 1/2 kilo Potatoes, cut into wedges
- 2 teaspoons Salt
- 1 teaspoon Italian Seasoning
- 2 Tablespoons Butter
- 1 Tablespoon Olive Oil
- 3 cloves Garlic, roughly chopped
- 1 teaspoon Hamburger Powder
INSTRUCTIONS:
- Preheat oven to 180 degrees Celsius.
- Clean pork ribs by removing excess fat and the thin film. Tap with clean towel to dry. Combine paprika, garlic powder, ginger powder, pepper, salt and brown sugar. Rub the dry ingredients onto the pork ribs and marinate for at least an hour. You can do this the night before for better flavor absorption.
- In a sauce pan, combine Sprite or 7 Up, ketchup, soy sauce, brown sugar and vodka. Simmer until the sauce thickens.
- Lay the marinated pork ribs on an aluminum foil. Pour half of the barbecue sauce onto the pork ribs. Cover the ribs with another aluminum foil and seal. Bake for 2 1/2 hours. Remove the ribs from the oven. Open the aluminum foil and pour the remaining half of the barbecue sauce. Switch your oven to broiling mode. Broil the pork ribs for 5 minutes or until the barbecue sauce caramelized.
- For the potato wedges, combine potatoes, salt and Italian Seasoning. Pour water until all the potatoes are submerge. Boil until tender and drain. In a hot pan, melt butter and olive oil. Saute chopped garlic. Add potatoes and toss in the hamburger powder. Toss the potatoes for 5 minutes. Transfer in the oven, preheated at 200 degrees Celsius and bake for 20 minutes. Serve with pork ribs.
