INGREDIENTS:
- 5 egg yolks
- sugar to taste
- 3/4 cup milk
- rind of 1 lemon
- 1/4 cup sifted flour
- Stir lightly beaten egg yolks into milk.
- Add flour and mix until smooth. Add sugar and powdered rind.
- Grease wafer iron (barquillera) on both sides and heat over moderate fire.
- Drop tablespoon of batter in the center of hot iron, press iron plates together.
- Heat iron on both sides to brown wafer.
- Shape barquillos while still warm and soft using a greased wooden cone or pin.
