Lumpiang Sariwa (Ubod)

INGREDIENTS:

  • ½ k. fresh ubod, cut into 2" -sticks
  • ¼ k. pork, boiled & diced 
  • 1 carrot, julienned 
  • 100 gms. green beans, sliced diagonally (1" -length) 
  • 2 large onions, sliced 
  • 1 head garlic, minced 
  • Lettuce leaves 
  • Lumpia wrappers 
For the sauce:
  • ¼ cup soy sauce
  • 1 tbsp. garlic, minced
  • 1 cup water 
  • 2 tbsps. cornstarch 
  • 1-½ tbsps. sugar
INSTRUCTIONS:

  1. To prepare the sauce, mix all the ingredients until dissolved. 
  2. Cook over medium heat; stirring constantly. 
  3. Cook (while stirring) for 30 minutes until it becomes clear. 
  4. To prepare the lumpia:
  5. In a skillet, saute garlic and onions. 
  6. Add the diced pork, when the pork starts to brown, pour some broth. 
  7. When boiling, add the ubod; stir. 
  8. Cook for a few minutes (until boiling point); cover the skillet and lower the flame. 
  9. Let simmer for at least 20 minutes. 
  10. Add the carrots, green beans. 
  11. Stir lightly until the beans are done. 
  12. Let cool. 
  13. Place a lettuce leaf on a lumpia wrapper, followed by a small amount of the above vegetable mixture. 
  14. Roll. 
  15. Repeat until all the mixture is used up. 
  16. Serve with the sauce.
