INGREDIENTS:
- ½ k. fresh ubod, cut into 2" -sticks
- ¼ k. pork, boiled & diced
- 1 carrot, julienned
- 100 gms. green beans, sliced diagonally (1" -length)
- 2 large onions, sliced
- 1 head garlic, minced
- Lettuce leaves
- Lumpia wrappers
- ¼ cup soy sauce
- 1 tbsp. garlic, minced
- 1 cup water
- 2 tbsps. cornstarch
- 1-½ tbsps. sugar
- To prepare the sauce, mix all the ingredients until dissolved.
- Cook over medium heat; stirring constantly.
- Cook (while stirring) for 30 minutes until it becomes clear.
- To prepare the lumpia:
- In a skillet, saute garlic and onions.
- Add the diced pork, when the pork starts to brown, pour some broth.
- When boiling, add the ubod; stir.
- Cook for a few minutes (until boiling point); cover the skillet and lower the flame.
- Let simmer for at least 20 minutes.
- Add the carrots, green beans.
- Stir lightly until the beans are done.
- Let cool.
- Place a lettuce leaf on a lumpia wrapper, followed by a small amount of the above vegetable mixture.
- Roll.
- Repeat until all the mixture is used up.
- Serve with the sauce.
