INGREDIENTS:
- 2 1/2 - 3 lbs chicken wings (drums and flats)
- 2 tbsp cooking oil
- 1/4 tsp peppercorn
- 4 garlic cloves peeled and pressed
- 2 bay leaves
- 3-4 thin slices of ginger root
- 1/2 cup sweet soy sauce
- 1/4 cup white vinegar
- 1/4 cup water
INSTRUCTIONS:
- Rinse chicken thoroughly then transfer to cooking pot.
- Add oil, peppercorn, garlic, bay leaves, ginger root, soy sauce and vinegar. Bring to a boil over medium heat.
- Lower heat then simmer for 10 minutes. Stir so that chicken wings are evenly coated with sauce on all sides. Cover then continue to simmer for 40 minutes, stirring occasionally.
- Stir in water, cover and continue to simmer on low for 10 more minutes.
- Remove from heat then transfer to a serving platter. Serve with rice or as an appetizer.
