Sweet Soy Chicken Adobo Recipe



INGREDIENTS:

  • 2 1/2 - 3 lbs chicken wings (drums and flats)
  • 2 tbsp cooking oil
  • 1/4 tsp peppercorn
  • 4 garlic cloves peeled and pressed
  • 2 bay leaves
  • 3-4 thin slices of ginger root
  • 1/2 cup sweet soy sauce
  • 1/4 cup white vinegar
  • 1/4 cup water

INSTRUCTIONS:

  1. Rinse chicken thoroughly then transfer to cooking pot.
  2. Add oil, peppercorn, garlic, bay leaves, ginger root, soy sauce and vinegar. Bring to a boil over medium heat.
  3. Lower heat then simmer for 10 minutes. Stir so that chicken wings are evenly coated with sauce on all sides. Cover then continue to simmer for 40 minutes, stirring occasionally.
  4. Stir in water, cover and continue to simmer on low for 10 more minutes.
  5. Remove from heat then transfer to a serving platter. Serve with rice or as an appetizer.
