Pansit Lug Lug Recipe

INGREDIENTS:
  • 1 pound noodles
  • 3 cloves garlic,minced
  • 1/2 cup + 2 tbspolive oil
  • 1 pound ground beef
  • 1/2 pound shrimp,peeled
  • 3 tbsp fish sauce
  • 4 tbsp butter
  • 1/2 tsp black pepper
  • 1/2 cup pork rinds cracklings,finely crushed
  • 1/4 cup smoked fish(tinapa) finely shredded and deboned
  • 3 hard-boiled eggs,chopped coarsly
  • 1/4 cup greens onions,finely chopped
ANNATTO SAUCE
  • dissolve 2 tbsp annatto powder in a 2 tbsp oil
INSTRUCTIONS:
  1. Cook the noodles in boiling water for about 10 minutes..
  2. Drain in a colander and stir in butter.
  3. In a skillet over medium heat,saute the garlic in 2 tbsp of the oil until nicely brown . Remove the garlic from the oil and set aside to use for garnishing.
  4. Saute the ground beef in the garlic -flavored oil for 10 minutes. Add the shrimp and fish sauce and black pepper and simmer for another 5 minutes
  5. Then add the anatto sauce , pork cracklings,and green onions..correct seasoning ..mix with noodles.leave some to sprinkle on top together with chopped eggs,fried garlic and tinapa
  6. Just use fish sauce for seasoning and u will be suprised how good my very own recipe of pancit luglug
  7. Serve with lemon wedges
