- 1 pound noodles
- 3 cloves garlic,minced
- 1/2 cup + 2 tbspolive oil
- 1 pound ground beef
- 1/2 pound shrimp,peeled
- 3 tbsp fish sauce
- 4 tbsp butter
- 1/2 tsp black pepper
- 1/2 cup pork rinds cracklings,finely crushed
- 1/4 cup smoked fish(tinapa) finely shredded and deboned
- 3 hard-boiled eggs,chopped coarsly
- 1/4 cup greens onions,finely chopped
- dissolve 2 tbsp annatto powder in a 2 tbsp oil
- Cook the noodles in boiling water for about 10 minutes..
- Drain in a colander and stir in butter.
- In a skillet over medium heat,saute the garlic in 2 tbsp of the oil until nicely brown . Remove the garlic from the oil and set aside to use for garnishing.
- Saute the ground beef in the garlic -flavored oil for 10 minutes. Add the shrimp and fish sauce and black pepper and simmer for another 5 minutes
- Then add the anatto sauce , pork cracklings,and green onions..correct seasoning ..mix with noodles.leave some to sprinkle on top together with chopped eggs,fried garlic and tinapa
- Just use fish sauce for seasoning and u will be suprised how good my very own recipe of pancit luglug
- Serve with lemon wedges
