- 1 TBSP cooking oil
- 4 cloves of garlic (minced)
- 1 medium-sized onion (sliced)
- 1 TBSP shrimp paste
- 1/4 kilo pork (sliced into small cubes)
- 6-8 pieces of chili fingers (sliced)
- 2 medium-sized red bell pepper (sliced)
- 6-8 pieces or red wild chili (minced)
- 1 medium-sized eggplant (sliced)
- a bunch of string beans (cut up)
- 1 cup fresh coconut milk
- salt to taste
INSTRUCTIONS:
- Heat oil in a pan and sauté garlic.
- Add sliced onion and cook until translucent.
- Under medium heat, add pork and leave it alone (with occasional stirring) until meat is cooked halfway.
- Add shrimp paste, bell pepper, chili fingers, and red wild chili. Cook for about 2 minutes.
- Add string beans and eggplant. Toss and let it cook until the meat is tender.
- Add coconut milk and turn heat off at the first sign of a boil.
- Season with salt according to taste. You may add more wild chili if you think it’s not spicy enough.
- Serve hot.
