Coconut Rice Stir Fry Recipe




INGREDIENTS:

Rice
  • 2 cups basmati rice
  • 4 cups coconut water
  • 1 tablespoon oil
Stir Fry
  • 2 medium beef steaks, sliced
  • 1 large yellow zucchini, sliced
  • 1 small onion, sliced
  • 1 head broccoli
  • 2 cloves garlic, minced
  • 1 tablespoon oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon graded ginger
  • 1 teaspoon ground cumin
  • shredded coconut (optional)

INSTRUCTIONS:

  1. In a large sauce pan combine rice, coconut water and oil. Bring to a boil. Continue to boil until water line is just below rice. Cover and cook over medium low heat for 20 minutes.
  2. Meanwhile, in a large pan fry sliced beef in oil until cooked through. Add remaining ingredients and cook until vegetables are tender. Serve on rice, if desired sprinkle with shredded coconut.
