Turbo Lechon Manok Recipe





INGREDIENTS:
  • 2 whole chicken, each weighing 850 grams
Marinade:
  • 1/4 C. Honey
  • 1/4 C. Patis
  • 3 pieces of calamansi
  • 2 T. rock salt
  • 2 T. Knorr seasoning
  • 2 t. ground black pepper
  • 4 stalks tanglad, optional
Gravy
  • 1 T. butter
  • 1 T. flour
  • drippings
  • 1 C. hot water
  • dashes of Knorr seasoning
Turbo Lechon Manok Recipe

INSTRUCTIONS:

  1. Marinate overnight. Insert 2 stalks of tanglad in each cavity.
  2.  Place the chicken on the rack breast side up. 
  3. Set the broiler at 300 F for 30 minutes. Then increase heat to 350 F for another 30 minutes. 
  4. Baste the chicken every 5 minutes (last 30 minutes) with the oil dripping. 
  5. After 15 minutes, gently turn over the chicken and continue basting. 
  6. Let the chicken rest for 30 minutes inside the turbo before chopping so it will retain its juices. 
  7. Remove the tanglad and let the chicken juice drain from the cavity inside the broiler


Gravy

  1. Deglaze the turbo broiler with hot water, set aside. 
  2. Melt butter, whisk in the flour.
  3.  Add the drippings with water, whisk until you get the consistency you like. 
  4. Add several dashes of Knorr seasoning.
