Chicken-Pork Afritada Recipe


INGREDIENTS:

  • 1 kg pork, cut into cubes
  • 1 kg chicken, chopped assorted parts
  • 4 medium potato, cut into chunks
  • 3 medium carrots, cut into wedges
  • 2 green bell pepper
  • 2 red bell pepper
  • 1-1/2 cup tomato paste
  • 4 pcs bay leaves
  • 5 tbsp olive oil
  • 1 bulb onion, sliced
  • 5 cloves garlic, minced
  • salt & pepper to taste
  • 2 chicken and/or pork broth cubes dissolved in
  • 4 cups water

INSTRUCTIONS:

  • Heat olive oil in a wok. Saute garlic and onion.
  • Add chicken and pork. Sprinkle with salt and and brown.
  • Add tomato paste and pour 4 cups of water. Simmer for 30 minutes or until tender.
  • Add potatoes and carrots. Season with salt and pepper. Add bay leaves.
  • Add bell pepper and olives. Simmer for another 3 minutes.
  • Serve with steamed rice.
