INGREDIENTS:
- 1 kg pork, cut into cubes
- 1 kg chicken, chopped assorted parts
- 4 medium potato, cut into chunks
- 3 medium carrots, cut into wedges
- 2 green bell pepper
- 2 red bell pepper
- 1-1/2 cup tomato paste
- 4 pcs bay leaves
- 5 tbsp olive oil
- 1 bulb onion, sliced
- 5 cloves garlic, minced
- salt & pepper to taste
- 2 chicken and/or pork broth cubes dissolved in
- 4 cups water
INSTRUCTIONS:
- Heat olive oil in a wok. Saute garlic and onion.
- Add chicken and pork. Sprinkle with salt and and brown.
- Add tomato paste and pour 4 cups of water. Simmer for 30 minutes or until tender.
- Add potatoes and carrots. Season with salt and pepper. Add bay leaves.
- Add bell pepper and olives. Simmer for another 3 minutes.
- Serve with steamed rice.
