INGREDIENTS:
- 1 tablespoon hot water
- 1 teaspoon honey
- 1 teaspoon sesame oil
- 1 teaspoon Shaoxing wine (optional, you can use dry sherry)
- 1 tablespoon soy sauce
- 1 teaspoon dark soy sauce* (Or just an additional teaspoon of regular if you don’t have dark)
- 1/4 teaspoon white pepper
- 1 tablespoon olive or vegetable oil
- 1 medium onion, diced
- 1 teaspoon salt
- 2 eggs
- 1 pound Chinese BBQ pork (cha siu) cut into 1/2 inch chunks.
- 4 cups cooked Jasmine rice (optional to add a tsp. of oil as well)
- 1/2 cup bean sprouts
- 2 scallions, chopped
- Additional soy sauce, to taste.
INSTRUCTIONS:
- In a small bowl, mix together the hot water, honey, sesame oil, wine, soy sauce, and white pepper. This is the sauce we’ll mix into the rice.
- In a large skillet, heat the oil on medium heat and add the diced onions. Stir occasionally and cook until the onions are translucent. Don’t cook them too fast.
- Make a little space to crack the eggs and scramble them (or do this on another pan if you need more room).
- Add the pork, and mix in the eggs once they’re scrambled and chopped into finer pieces. Add the rice and mix in the sauce we made in step 1.
- Add the bean sprouts and chopped scallions and continue to mix and cook until everything is nice and warm.
- Here, you can add more soy sauce as desired. This gave it a richer, darker color and added a touch more flavor.
Notes:
You can also add other ingredients like diced carrots & peas.
