INGREDIENTS
1 1/2 cups black beans
1 1/2 lbs pork neck bones
10 cups water
3 cloves garlic, minced
1/2 onion, chopped
1 root ginger, sliced
1 pork boullion cube
2 tsp bagoong
cooking oil
DIRECTIONS
- In a pot, sauté onion, garlic and ginger in cooking oil.
- Add pork neck bones. Saute for another 3 minutes.
- Then add water.
- Add the black beans.
- Bring to a boil. Stir occasionally. Remove scums as it rises.
- Add the pork bouillon and the bagoong.
- Simmer until the beans are soft.
- Add the bittermelon leaves. Simmer for 2 minutes.
- Serve hot with steamed rice.
