Rice Patties With Sweet Grated Coconut Recipe


INGREDIENTS

2 cups glutinous rice flour
1 cup water
3 cups freshly grated coconut with 2 cups sugar

DIRECTIONS

  1. Knead flour and water to form a smooth dough.  
  2. With floured hands, pinch off 1 1/2 tablespoons and shape into a small patty 1/2″ thick.  
  3. Repeat with remaining dough then place in a saucepan of boiling water until they float.  
  4. Once floating, scoop out with a slotted spoon and drain.  
  5. Place in a bowl along with coconut and serve.
