Creamy Green Chile, Corn And Bacon Dip Recipe


INGREDIENTS:

  • 6 slices bacon
  • 3 cups frozen corn
  • ½ red onion, chopped
  • 1 green chile, such as Hatch green chile, poblano or Anaheim, seeded and chopped
  • 1 red bell pepper, seeded and chopped
  • 1 orange bell pepper, seeded and chopped
  • 8 ounces cream cheese, softened and cubed
  • 2 tablespoons half and half
  • 2 teaspoon sugar
  • 1 teaspoon salt
  • 1 tablespoon hot sauce (optional)
  • Chips for serving

INSTRUCTIONS:

  1. Heat a large skillet over medium-high heat. Add bacon, cooking for 6-7 minutes or until browned, turning once. Remove to a paper towel lined plate. Chop into bite-sized bits.
  2. Drain fat, reserving 1 tablespoon. Add corn through bell pepper. Cook for 4-5 minutes until slightly soft, but still crisp. Stir in remaining ingredients, except chips, of course. Stir until creamy.
  3. Transfer to a serving dish, top with bacon and serve with desired chips. Serve warm. To re-heat, place in oven at 350 for 10 minutes.
