Healthy Fruity Prawn Fried Rice Recipe


INGREDIENTS:

  • 300 g basmati rice
  • 1 tsp turmeric
  • 1 Tbs olive oil
  • 1 red pepper
  • 1 red onion
  • 150g frozen peas
  • 200g cooked prawns
  • 80g raisins
  • 150g seedless grapes
  • 1 200g tin sweetcorn
  • 1 spring onion
  • 2 Tbs soy sauce

INSTRUCTIONS:

  1. Add the rice and the turmeric to a large pan of boiling water and cook as per the packet instructions.
  2. While the rice is cooking, finely chop the onion and red pepper. Heat the oil in a large pan, and gently fry the onion and pepper until soft.
  3. Add the peas to the pan and gently fry until the peas have defrosted and warmed through. Take off the heat until the rice has finished cooking.
  4. Drain the rice and add it to the pan with the rest of the ingredients. Stir well to mix together, then season with salt and pepper to taste.
  5. Serve warm or cool down quickly and store in the fridge until needed.
