INGREDIENTS:
- 300 g basmati rice
- 1 tsp turmeric
- 1 Tbs olive oil
- 1 red pepper
- 1 red onion
- 150g frozen peas
- 200g cooked prawns
- 80g raisins
- 150g seedless grapes
- 1 200g tin sweetcorn
- 1 spring onion
- 2 Tbs soy sauce
INSTRUCTIONS:
- Add the rice and the turmeric to a large pan of boiling water and cook as per the packet instructions.
- While the rice is cooking, finely chop the onion and red pepper. Heat the oil in a large pan, and gently fry the onion and pepper until soft.
- Add the peas to the pan and gently fry until the peas have defrosted and warmed through. Take off the heat until the rice has finished cooking.
- Drain the rice and add it to the pan with the rest of the ingredients. Stir well to mix together, then season with salt and pepper to taste.
- Serve warm or cool down quickly and store in the fridge until needed.
