Salmon In Lemon Butter (W/ Garlic Roasted Broccoli Recipe)


INGREDIENTS:

  • 1 side of salmon or 4 fillets (about 1-1.5 lbs total)
  • 1 tablespoon butter
  • 1 lemon, sliced
  • Salt and pepper
  • Fresh herbs, if desired (basil, parsley or dill are good choices)

INSTRUCTIONS:

  1. Preheat oven to 425. Place salmon on a piece of parchment or foil, skin side down (if there is skin). If cooking fillets, use a separate pieces of parchment for each one. Season with salt and pepper, Dot with butter. Add herbs, if desired. Top with lemon slices. Fold up the parchment and seal completely. Place packets on a baking sheet and bake for 15-20 minutes, depending on the thickness. Fish will be done when flakes easily with a fork and has just turned opaque.
