Filipino-Chinese Style Adobo

INGREDIENTS:

  • 500 grams chicken (legs, thigh or momo in Japanese)
  • 4 eggs, hard-boiled
  • 1/2 cup rice wine vinegar
  • 1/4 cup kikkoman soy sauce
  • 1/2 head of garlic, finely chopped
  • 1 tablespoon olive oil
  • 1 teaspoon whole black pepper
  • 1/2 teaspoon salt
  • 1 piece dried bay leaf
  • 1 piece star anise
  • 1/8 teaspoon five spice powder (optional)
  • 1 teaspoon ginger paste (optional)
  • 1 tablespoon sesame oil (optional)
  • 1 and 1/2 cup water
  • 2 tablespoons brown sugar

INSTRUCTIONS:

1. Fry the garlic and ginger in olive oil until brown.
2. Add the chicken and brown all sides.
3. Add the vinegar and soy sauce. Simmer for 5 minutes, without mixing.
4. Add the eggs, water, salt, pepper, five spice powder, star anise and bay leaf.
5. Cover and simmer for 10 minutes.
6. Add the sugar and mix.
7. Reduce the sauce for 20-25 minutes.
8. Serve with rice and enjoy!
