- 1 tbsp oil
- 4 cloves garlic, chopped
- 1 small onion, sliced
- 1 medium tomato, chopped
- 2 medium ampalaya, cut into semi-circles, salted and drained
- 10-15 shrimp
- 2 eggs, beaten together
INSTRUCTIONS:
- Heat the oil in a saucepan. Add the garlic and cook for 2 to 3 minutes.
- Add the onion and cook a further 2 minutes.
- Add the tomato and cook for a few minutes until it softens.
- Next add the prawns and cook just until they change colour.
- Now add the ampalaya, and cook for 4 to 5 minutes; we still want it to remain crunchy.
- Season with salt and pepper. Then push the ampalaya and other ingredients to the side of the saucepan, and make sure the heat is on high.
- Add the egg and cook for a couple of minutes, stirring constantly. Then mix in the other ingredients.
- Serve hot with rice!
