Ginisang Ampalaya (Sautéed Bitter Melon With Shrimp Recipe)



INGREDIENTS:
  • 1 tbsp oil
  • 4 cloves garlic, chopped
  • 1 small onion, sliced
  • 1 medium tomato, chopped
  • 2 medium ampalaya, cut into semi-circles, salted and drained
  • 10-15 shrimp
  • 2 eggs, beaten together

INSTRUCTIONS:
  1. Heat the oil in a saucepan. Add the garlic and cook for 2 to 3 minutes.
  2. Add the onion and cook a further 2 minutes.
  3. Add the tomato and cook for a few minutes until it softens.
  4. Next add the prawns and cook just until they change colour.
  5. Now add the ampalaya, and cook for 4 to 5 minutes; we still want it to remain crunchy.
  6. Season with salt and pepper. Then push the ampalaya and other ingredients to the side of the saucepan, and make sure the heat is on high.
  7. Add the egg and cook for a couple of minutes, stirring constantly. Then mix in the other ingredients.
  8. Serve hot with rice!
