Salmon Croquettes Recipe

INGREDIENTS:

Croquettes
  • 2 tablespoons light mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1-1/2 teaspoons Dijon mustard
  • 1/4 cup green onions, sliced
  • 2 tablespoons red bell pepper, minced
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 12 oz. salmon, flaked (fresh or packaged skinless, boneless)
  • 1 egg
  • 1 cup Panko breadcrumbs
  • 1 tablespoon canola oil
Tartar Sauce
  • 1/4 cup light mayonnaise
  • 2 teaspoons fresh lemon juice
  • 2 teaspoons Dijon mustard
  • 2 tablespoons fresh parsley, chopped
  • 2 teaspoons capers, chopped
  • 1 teaspoon minced garlic
  • 1/4 teaspoon salt
INSTRUCTIONS:

Croquettes
  1. Stir together all ingredients (with a fork) except for Panko breadcrumbs until well combined. Add Panko and toss gently. Divide and shape into 8 patties; mixture will be loose - do not pack tightly together.
  2. Heat oil in a large skillet over medium heat. Add croquettes and cook 5 minutes on each side, or until lightly browned.
Tartar Sauce
  1. Stir together all ingredients; serve immediately with croquettes or chill until ready to serve.
