INGREDIENTS:
Brownie
- 1/2 cup butter
- 1/4 cup semi-sweet chocolate chips
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup all-purpose flour
- 1/4 cup cocoa powder
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2 ounces unsweetened chocolate chips or squares
- 1/2 cup butter, at room temperature
- 1 cup confectioners' sugar
- 3 Tablespoons whipping cream
- 1 teaspoon vanilla
- Preheat oven to 350F.
- Grease a mini muffin tin with oil.
- Melt butter and chocolate in a small pot, set to cool.
- Beat both sugars and eggs, until mixture thickens. Add cooled chocolate and mix till well incorporated.
- In a separate bowl whisk together flour, cocoa powder, baking powder, and salt. Add this to wet mixture, and mix till well incorporated.
- Fill prepared mini muffin tin with brownie batter 3/4 of the way.
- Bake for 12 - 15 minutes, or until an inserted toothpick comes out clean. Set to cool.
- In small saucepan, melt chocolate over low heat then let cool.
- In large bowl, beat butter until fluffy, then add sugar and cream.
- Beat in melted chocolate and vanilla, put into a piping bag and pipe onto the mini brownies.
