- 1 lb chicken breasts, thinly sliced
- 1 leek, washed well and sliced thinly
- 1 Meyer lemon, juiced
- 4 clementines (3 juiced, one segmented)
- 1 cup sliced mushrooms
- Extra virgin olive oil
INSTRUCTIONS:
- Saute the chicken breasts in olive oil until done. 5 minutes.
- Add the leeks and mushrooms and saute 2 to 3 minutes.
- Add the juice and heat thoroughly.
- Add the segmented Clementines and heat.
- Serve. Serve over rice if not Paleo.
