INGREDIENTS:
- 4 lbs. cubed pork shoulder
- 5 lbs. cubed potatoes
- 12 oz. canned tomato paste
- 1 tsp. minced garlic
- ½ cup chopped yellow onion
- 2 large chopped tomatoes
- 1 cup tomato sauce
- ½ cup whole green olives
- 1 cup fresh red bell pepper cut to ½ to 1 inch squares
- 1 tsp. black pepper
- 1 tsp. lemon pepper
- 2 tsp. salt
INSTRUCTIONS:
- Saute garlic, onions, fresh tomatoes till onion is translucent.
- Add the pork.
- Add the tomato sauce and tomato paste.
- Cook on low heat, cover, till the pork is tender about 20 minutes.
- Add the potatoes, olives, and bell peppers.
- Cook until the potatoes are tender.
- Add the seasonings.
