Breakfast Smashed Avocado Tomato Toast With Fried Poached Egg Recipe


INGREDIENTS

2 slices gluten-free or whole grain toast
1 avocado
1 wedge lemon
sea salt
2 fried eggs
1 tomato, sliced
salt and fresh ground pepper, to taste

DIRECTIONS

  1. Mash avocado with juice from lemon wedge and sea salt to taste. 
  2. Spread on top of toast. 
  3. Top with fried egg and fresh tomato slices. 
  4. Season with a little salt and fresh ground pepper.
