INGREDIENTS
2 slices gluten-free or whole grain toast
1 avocado
1 wedge lemon
sea salt
2 fried eggs
1 tomato, sliced
salt and fresh ground pepper, to taste
DIRECTIONS
- Mash avocado with juice from lemon wedge and sea salt to taste.
- Spread on top of toast.
- Top with fried egg and fresh tomato slices.
- Season with a little salt and fresh ground pepper.
