- 1 kilo linguine, cooked according to package directions
- 1 lb chicken breast fillet
- 1 pack Cajun seasoning mix,
- 1 large white onion, diced
- 1 medium red bell pepper, diced
- 1 medium green bell pepper, diced
- 4 tablespoons butter
- 2 tablespoons cooing oil
- 3 cups milk
- 1 cup heavy cream
- 1 cup cheddar cheese, grated
- 1 teaspoon cayenne pepper
- 1 teaspoon paprika
- salt and black pepper to taste
- Season chicken fillets with the Cajun seasoning mix, reserving a tablespoon of the mix for later use. Set aside to marinate for at least 30 minutes.
- In a pan over medium heat, heat oil and 2 tablespoons of butter.
- Pan fry chicken fillets until brown.
- When cooked, remove from heat and set aside.
- In the same pan, without discarding the oil and drippings, add in the remaining butter.
- Add in onions and saute until caramelized. Do not worry about the brown bits that are stuck in the pan, the water from the onions will soften up the fond (those brown bits are where all the flavors are) and deglaze the pan.
