INGREDIENTS:
- 1 lb cubed pork (chops, loin...)
- ½ tsp each chili flakes, mustard powder and ground ginger
- 2 T each cocoa and flour
- 2 diced celery stalks
- 2 mashed garlic cloves
- 2 T oil
- 2 cups stewed tomatoes
- ½ cup wine
- 2 cup cubed sweet potatoes (skins on)
- 2 T chopped cilantro
INSTRUCTIONS:
- Combine the first six on the ingredient list in a deep pot. Cook out the raw flour taste and deglaze with the wine.
- Add remaining ingredients and cook slowly (covered). How? Here are your choices: slowcooker (on low for 6 hours), in the oven (350 degrees for two hours) or on the cook top (1 hour on low and watching for scorching on the bottom).
- Serve with fresh, chopped cilantro.
