Quick And Easy Chicken Chow Mein Recipe



INGREDIENTS:
  • 1 10 oz pack of Chinese egg noodles
  • 2 tablespoons olive oil
  • 3/4 cup chopped green onions chopped plus extra for garnish
  • 1 pound skinless chicken breast sliced very thinly
  • 1 red pepper cut into thin strips
  • 2 cloves large garlic minced
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 1 1/2 tablespoons Hoisin sauce
  • 1 leaves bunch of bok choy washed and roughly chopped
Quick And Easy Chicken Chow Mein Recipe

INSTRUCTIONS:

  1. Cook the noodles as per the instructions on the package. Drain, rinse and set aside.
  2. In a large 10 inch non-stick pan (at least) heat the olive oil and add the green onions.
  3. Sauté for a few minutes on medium until the onions start to turn soft.
  4. Add the chicken and cook stirring well until the chicken just cooks through.
  5. Add 1/2 of the chopped red pepper and all of the garlic to the pan and stir well.
  6. Pour in the soy sauce, sesame oil and hoisin, cook over a high heat for about 3-4 minutes.
  7. Add the noodles in batches to make sure they get evenly coated in the sauce.
  8. Mix the noodles through with a pair of tongs making sure to coat the noodles well.
  9. Add the chopped bok choy and gently fold through the noodles.
  10. Sprinkle the rest of the red peppers over the top and garnish with more green onions if desired.
  11. Serve at once.
