- 4 catfish filets, about 7 oz each and ½-inch thick
- 2 tablespoons butter
- 2 tablespoons olive oil
- ¼ teaspoon garlic powder
- ¼ teaspoon red chili flakes
- Salt and black pepper, to taste
- Nonstick cooking spray, as needed
INSTRUCTIONS:
- Spray the grill rack with nonstick cooking spray.
- Get the grill medium-hot (about 350 degrees F).
- Put the butter, oil, garlic and chili flakes in a small pan and heat for a minute or until the butter melts.
- Take the pan off the heat.
- Brush half of this mixture over the catfish filets, then season with salt and black pepper.
- Grill for 4 or 5 minutes, with the lid down if your grill has one.
- Flip the filets and brush the rest of the butter mixture over them.
- Grill for another 4 minutes or until the fish flakes easily with a fork.
- Serve immediately.
