INSTRUCTIONS:
- 1/3 cup panko bread crumbs
- 1 cup milk
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 2 teaspoons freshly ground black pepper
- 1 tablespoon store-bought banana ketchup
- 1 cup ready-to-use shredded carrots, diced
- 1 small red onion, diced (or yellow if you prefer)
- 2 to 3 roasted bell peppers, diced (found in most grocery stores)
- 1 tablespoon sweet relish (found in most grocery stores)
- 4 cloves garlic, minced (2 teaspoons)
- 2 lbs ground beef
- 9 slices uncured bacon (or 1 lb ground pork)
- 6 hard-boiled eggs, shells removed
- Kosher or sea salt and fresh ground black pepper, to taste.
For the glaze:
- 1/3 cup store-bought banana ketchup
INSTRUCTIONS:
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the bread crumbs, milk, soy sauce, fish sauce, black pepper, and 1 tablespoon of banana ketchup.
- Set aside for 5–10 minutes.
- In a second large bowl, combine the ground beef and ground pork (if using) with the dice carrots, onion, roasted bell peppers, sweet relish, garlic, salt, and fresh ground pepper.
- Next, add the bread crumb mixture to the meat mixture. Using your hands (or a rubber spatula), gently mix everything until well-combined.
