- 16 ounces lean ground beef
- 1 package Onion Soup Mix
- 1/8 cup blanched almond meal
- 4 ounces shredded Cheddar cheese
- 6 slices bacon, crisply cooked and crumbled
- 1/8 cup grated Parmesan cheese
- 1/4 cup milk,2%
- Heat oven to 350°F.
- In large bowl, stir together all ingredients using hands or spoon.
- Shape mixture into balls.
- Using mini muffin pans drop 1/2 teaspoon reduced sugar ketchup in the bottom of each well.
- Place meatball into the prepared pan.
- Bake 20 to 25 minutes or until brown. Immediately remove from pan.
- Serve warm with ketchup and mustard for dipping.
